The meat of the merc has a pleasant smell and an appetizing creamy shade. Its meat does not tolerate temperature well. The boiled leg becomes stiff. Therefore, it is recommended to use it in cooking in its raw form; or cook over very low heat (up to 50C). It has a neutral, slightly sweet protein taste. The meat is dense and elastic. Suitable for sea salads, sushi and other cold dishes. Clam is very popular in Canadian and American cuisines, where it is categorized as “clams”.
